Peru has extreme potential as a producer of high-quality coffees. It is the world's largest exporter of organic Arabica coffee. Thanks to very high altitudes and fertile soil, small farmers produce coffees that receive worldwide awards.
Farmers in Peru usually process coffee on their own farms. Most coffee is processed using the washed method. Cherries are usually crushed, fermented and dried in the sun on raised beds or in drying rooms. After drying, the coffee is then sold in parchment to the cooperative, which then handles it further until it reaches the MOTMOT roaster.
Vašek - the headroaster of our roastery chose a procedure that makes the coffee suitable for both espresso and filter. In the cup you will smell soft notes of grapefruit and then butter cookie and green tea.
